It’s the most wonderful time of the year for so many reasons!  This time of year is full of many fun family traditions and activities for me.  One of my favorite traditions I have with a good college friend of mine is getting together to make Cookieballs.

Many of you have heard of the Cakeball, but long before it we were making Cookieballs.  This all started with the Oreoball that so many have seen made and it became a challenge for us each year to come up with new recipes for with different kinds of cookies and flavors.   To date, we have come up with 25 flavors to make and our biggest batch to make was around 1,200 of these little gems over the course of a week.  They have become a favorite of our friends and family to receive them as gifts.

Here is just a glimpse into one of the last times we whipped up a Christmas batch!

(Believe it or not there was another whole two tables of these in the kitchen that night!)

Today I am going to share with you how to make the Frosted Oatmeal version of the Cookieball.  These are no bake, super simple, and super tasty!

Here’s what you will need:

1 block cream cheese
1 pkg Oatmeal cookies (I like the cheap walmart ones just fine)
1/2 block almond bark

Anything you want to decorate with. You can see our many designs.  I just use the colored chips of white chocolate and melt them down.  And then I love to add glitter to anything sweet, because let’s be real, glitter makes everything better…right?!  On that note, if buying edible glitter get the Disco Dust.  Its the best and super sparkly.  You can find it at specialty cake shops or order it online on Amazon.

1.  First, crush your cookies.  I run mine through the food processor until they are super fine. They will have the texture of dirt almost.

2.  Mix your block of cream cheese and oatmeal cookies until they are a paste.  I mix these by hand in a bowl if its just one batch.  Otherwise you can do them in your stand up mixer, but make sure to watch the consistency.  You do not want them grainy, but you don’t want to over mix as well.

3.  Roll your oatmeal mixture into small 1 to 1 1/2 inch balls and set them out on wax paper.  Let them sit for at least 30 minutes so that they don’t come apart while you are dipping them in the chocolate.

4.  Melt your almond bark in a bowl (use the directions on the package for this).  Then dip your cookieballs in the melted almond bark one by one.

5. Let them sit and harden.  Decorate if desired.

6.  Eat them of course!
